Chocolate Cream Cheese Pancakes

What you say? Chocolate for breakfast! Yep, we mixed up a batch of chocolate cream cheese pancakes to see what we would get and it looks like these will be on the menu from now on. We figured since you can never have too much chocolate, we made ourselves some buttery chocolate maple syrup as well. I am thinking that Mom might like these on her special day coming up May 14th. Happy Mothers Day to my Mom, Grandma, sister and all you Moms out there. Hope you have a wonderful weekend.

Chocolate Cream Cheese Pancakes – Serves 3 (generously)

1 cup flour, 1/2 C whole wheat flour, 1/2 C cocoa powder, 3 TB sugar, 2 tsp. baking powder, 1/2 tsp. of baking soda, dash of salt, 4 TB melted butter, 2 tsp. vanilla, 2 C skim milk, 2 TB cream cheese (broken in chunks) and 1/3 C dark chocolate chips ( or more if you like 🙂

Chocolate syrup – 1/2 C dark chocolate chips, 2 TB butter and 1/4 C maple syrup.

Combine the flour, cocoa powder, sugar, baking powder, soda and salt together in a mixing bowl. Pour in the melted butter, vanilla and milk and whisk until combined. Fold in chocolate chips and cream cheese.

Heat a frying pan over low to medium heat and coat with a non stick spray. Pour whatever size pancake you like into the pan and cook until easy to flip. Cook until done approx. 2 min. on each side.

While pancakes are cooking, make your syrup. Add all your syrup ingredients to small sauce pan and heat over low to medium heat melted and smooth.

When ready to serve pancakes, top each pancake with a slice of butter and dust with powdered sugar. Drizzle a little syrup over the pancakes or serve on the side.

We served our pancakes with sausage and grapes on the side. This lucky couple enjoyed breakfast delivered to their room. One had the chocolate cream cheese pancakes and the other decided on the breakfast burrito. Perfect choice to share when one wants sweet and one wants savory.

 

Mother’s Day Brunch

I will probably be making breakfast for other Mom’s on Mother’s Day weekend and that is okay, however, if I wasn’t, I would want someone to treat me to a Mother’s Day Brunch at the Paine Art Museum and Gardens on Saturday, May 9th. at 10:00 AM.  The Paine is an amazing setting and inside the Paine’s conservatory is the perfect location to enjoy this scrumptious brunch prepared by Zuppa’s. Some of the items being offered for brunch are chilled asparagus with strawberries, goat cheese and balsamic vinaigrette
watercress salad, brown sugar bacon, rhubarb glazed ham, dauphinoise potatoes, vanilla crème brulee, assorted muffins and scones, coffee, orange juice, champagne and mimosas.  Why not splurge on your Mom, Grandma, Aunt, Sister or friend this year who means so much to you. Afterwards, wander through the gardens and enjoy the wondrous display of tulips, daffodils and flowering trees coming to life as we enter into summer.

First off, I just want to say Happy Mothers Day to my Mom and all the other Moms out there this weekend. As much as I enjoy what I do for a living, I usually miss out on weekend activities with our friends and have to cut short holiday gatherings with family due to having guests at the inn. This Mothers Day day is no exception. My Mom lives on the other side of the state, and though it is only a 2 1/2 hour drive, I will have to find another time to visit. She runs a greenhouse, so I know she will be plenty busy herself.  Since I am a Mom myself though, I am very lucky to be able to spend the day with my daughter. Traditionally, we like to get flowers in the ground on Mothers Day but the last few years we have learned that we usually get one more freeze and we are outside covering up and hoping that we can save our new garden, so we may put it off for one week.

If you are lucky enough to be able to spend the day with your Mom and want to do something special, may we recommend having a girls weekend away at a bed and breakfast 🙂 where a comfy bed and delicious home made breakfast is always included plus home made desserts and a wine and cheese social both Friday and Saturday night.  If that is not possible, brunch is always lovely, as Oshkosh has many brunch choices to choose from this Mothers Day, including the Roxy which is located downtown among many great retail stores. Oshkosh Community Players also presents, Barefoot in the Park at the Grand Opera House May 8-10.

Whatever you decide to do this weekend, tell your Mom that you love her. It will be the best gift you can give her.
