Friday recipe of the week – Kiwi and Pineapple Yogurt Parfait

Kiwi and Pineapple Yogurt Parfait – serves 4 small fruit cup dishes

Ingredients 

Granola or granola bars, macadamia nuts or cashews, lowfat vanilla yogurt, cool whip, coconut, white chocolate, kiwi, pineapple and honey.

Granola Mixture - Homemade granola  or 4 nature valley granola bars (crunchy) broken into pieces  and 12-14 macadamia nuts or cashews.

Yogurt Mixture - 6oz. vanilla yogurt, 1/2 C light cool whip, 1 TB shredded coconut and 1 TB grated white chocolate

Fruit Mixture - 1/2 C coarsely chopped kiwi, 1/2 C pineapple tidbits and 1 1/2 tps. honey

Garnish – 2 kiwi fruit slices, white chocolate shavings and cashews or macadamia nuts.

In a small bowl mix yogurt mixture until blended. Set aside.

In another bowl, toss fruit mixture until coated.

Alternately spoon granola mixture, yogurt mixture and fruit mixture. Repeat layers and top then top with garnish.

Friday recipe of the week – Breakfast Calzone

This recipe can be a little putzy, but once you do it a few times, its a breeze. Besides it looks so pretty and you will get rave reviews. I served this sausage, grapes and the wonderful blueberries that are now in season.

Breakfast Calzone – Serves 8, but can be cut in half

2- 8oz. packages of crescent rolls

1/4# ham and 1/4# of salami – diced

4 oz. cream cheese

1/2 C milk

5 Large eggs plus 1 egg white

1 tsp. butter

3/4 Mushrooms (optional)

1/4 C onions

1/2 C shredded cheddar cheese

salt and pepper to taste.

Preheat oven to 375 degrees.

On a cookie sheet, use a  non stick spray and roll out crescents so they are 4 deep and 2 wide. Connect and seal so it is one large piece. On the longest side, cut 3-4 strips down each side. Arrange ham and salami down the middle of the dough all the way down.

In a medium bowl, microwave cream cheese and milk for 90 seconds. Beat eggs in cream cheese mixture.

Saute onions and mushrooms in butter.  Add egg mixture to pan and season with salt and pepper. Cook until set BUT still wet so it can be spooned over ham.  Sprinkle cheese over ham and eggs.

Lift strips of dough to criss cross over egg mixture. Pinch together  sides and seal ends.

Beat egg whites and brush over dough.

Bake 25-30 minutes until golden brown.

Friday Recipe of the Week – Fruit Cocktail BarsBake for

Another crazy Friday. I am just getting around to posting our recipe of the week at 3:00 in the afternoon.  Tonight for desserts for our guests that are here for Rock USA and the All Star game is Fruit Cocktail Bars.  This is an old recipe that Grandma makes all the time. I remember eating way too many as a kid and her having them with her coffee in the morning. Dessert or as a coffee cake, you can’t go wrong.

Fruit Cocktail Bars – Preheat oven 350 degrees

1/2 C Sugar, 2 eggs, 2 1/4 C flur, 1 1/2 tsp. baking soda, salt to taste, 15oz. fruit cocktail, 1 C coconut, walnuts.

Beat eggs and sugar until fluffy. Stir in fruit cocktail. Stir in Flour, soda and salt. Grease a jelly roll pan. Pour batter into pan and top with coconut and nuts. Bake for 30 minutes. Loosen bars around edge when done.

Frosting

1/4 C sugar, 1/2 butter, 1/4 c half and half, 1 tsp. vanilla

Mix sugar, butter and milk in a saucepan. Boil 2 minutes and add vanilla. Pour over bars.

 

 

Friday Recipe of the Week -Watermelon and Feta

This really isn’t recipe, because it is so darn easy, but thought why not. Its summer time and watermelon belongs on the table whether its for breakfast, lunch, dinner or even a snack. This little item you can have anytime of the day and throw it together in a matter of a coupleof minutes.

Watermelon and Feta Fruit Cup 

Watermelon and feta – Thats it!

I use a melon ball scoop to get out the watermelon and put into a dessert cup. Sprinkle a as much or as little crumbled feta as you would like on top of the watermelon and enjoy! I also used a mint sprig from the garden to fancy it up.

Recipe of the Week – Breakfast Burritos

Breakfast Burritos – Serves 6

1 # pork or turkey sausage

6 Large burrito sized tortillas

Shredded cheddar cheese

12 Lg eggs

White Sauce

Salt and pepper to taste

Brown sausage and set aside. Scramble eggs and season to your liking. Set aside.

Lay out a tortilla and scoop a line of sausage onto burrito. Layer of a line of eggs and sprinkle shredded cheese on top. Roll up, tucking in your side so nothing falls out. Lay Seam side down into a 9×13 pan.  Do this with each of the rest. Preferably do not let each burrito touch each other.

Make your white sauce (flour, milk and butter) or buy a  mix of Country Gravy mix in your taco seasoning isle.

Pour over burritos and layer with more cheese.

Bake for 15-20 minutes until cheese is bubbly.

Serve with salsa.
