I apologize for those of you who follow my blog and there was not recipe listed on Friday. I was traveling and doing some work for my family and time got away from me, so today I share with you my red velvet pudding cake. This recipe came to when I was experimenting with a red velvet cake recipe and the the cakes stuck to the bottom of the cake pan. I had all this cake, but not in the form it should be. I started experimenting with rum balls and came up with this little recipe. The rum balls were scrumptious as well. I might share those at another time.
Red Velvet cake -broken into pieces, but not too fine.
1 tsp or more of amaretto or amaretto creamer. -whatever you prefer. I have used both
1 whole egg and 1 egg yolk
1/4 C half and half
1/8 tsp. salt
1/2 tsp. vanilla
3 TB cream cheese
1/4 C powdered sugar
Mix the cake, half and half, amaretto, eggs, salt and vanilla together. Add to a soufle cup.
Mix the powdered sugar and cream cheese together. Fold the cream cheese mixture into the cake mixture.
Bake 30 minutes
