I’ve decided to post a Friday recipe of the week and add a picture when I can. This week’s recipe was inspired by Author Katie McKy who visits us several times a year.
Vegan Oatmeal – Serves 1+
1 C Almond milk, coconut milk or soy milk (plus extra for later)
1 C Quick Oats
1 Sm. apple (diced)
1 1/2 TB Brown Sugar
1/2 tsp. lemon juice
1 1/2 tsp. cinnamon
Dash of Salt
Crushed Pecans (optional)
Spray a 9 ” skillet with a nonstick spray. Add diced apples, lemon juice and 1/2 tsp of brown sugar and 1/2 tsp cinnamon. Stir until apples are med soft. Put off to the side.
Add 1C milk to a small saucepan. Turn on high. Just as it starts to bubble slightly, add oatmeal , salt and apples and turn temp. to low. When all the oatmeal has absorbed all the milk stir in remaining, cinnamon and brown sugar
Spoon into a bowl and pour a little more milk on top. You may add additional brown sugar and/cinnamon as well to the top for extra sweetness and show. Add pecans and serve warm.
